Strawberry Rhubarb Smoothie - Vegan
This smoothie is a little bit tart and little bit sweet and totally delicious.
- 3 cups prepared cooked rhubarb you can use homemade (see instructions below) or store-bought frozen, cooked, sweetened rhubarb thawed
- 3 cups whole fresh strawberries approx. 24 whole berries
- 2 small apples, cored and chopped
- ¼ teaspoon turmeric
How to Prepare Fresh Rhubarb
Thoroughly wash the rhubarb and cut it into 1-inch pieces.
Add the pieces to a saucepan and add just enough water to cover the rhubarb.
Add sugar to taste - it will depend on how much rhubarb you are cooking.
Bring to a boil over medium-high heat and boil for about 20 seconds.
Turn off the heat and allow the rhubarb to sit until it has cooled.
