Strawberry Rhubarb Smoothie - Vegan

This smoothie is a little bit tart and little bit sweet and totally delicious.

  • Vitamix


  • 3 cups prepared cooked rhubarb you can use homemade (see instructions below) or store-bought frozen, cooked, sweetened rhubarb thawed
  • 3 cups whole fresh strawberries approx. 24 whole berries
  • 2 small apples, cored and chopped
  • ΒΌ teaspoon turmeric


  • Combine all ingredients in a blender and blend until smooth.
  • Serve immediately or refrigerate for up to 24 hours or freeze for later use.

How to Prepare Fresh Rhubarb

  • Thoroughly wash the rhubarb and cut it into 1-inch pieces.
  • Add the pieces to a saucepan and add just enough water to cover the rhubarb.
  • Add sugar to taste - it will depend on how much rhubarb you are cooking.
  • Bring to a boil over medium-high heat and boil for about 20 seconds.
  • Turn off the heat and allow the rhubarb to sit until it has cooled.
